Just thought I'd post here again since this forum looks dead, as well as let you guys know I'm NOT dead! :P
Moved now (almost 3 weeks), and still getting set up and right now my only internet is 3G since I'm living out in the sticks (sucks to be me). I am looking into seeing what if any, high speed internet is available out here.

Super EASY and super TASTY supper recipe! The original source is from "The Best of Bridge" cookbook.
3 chicken breasts, skinned & boned
1/4 tsp. pepper
3 Tbsp. oil
1 – 10 oz. (280 g) pkg. frozen asparagus or broccoli (use your favorite veggies, I always do)
Fresh is even better
1 – 10 oz. (284 ml) can cream of whatever soup (mushroom, chicken, etc., it's all good)
1/2 cup light mayonnaise
1 tsp. curry powder
1 tsp. lemon juice
1/2 – 1 cup grated cheddar cheese
* I like to double up on the sauce and max out the cheese - REALLY good!
Cut chicken into bite-sized pieces and sprinkle with pepper. Saute quickly in oil over medium heat just until opaque, roughly 7 minutes (don’t overcook – the chicken will get tough! Drain. Cook asparagus and/or broccoli until semi-crunchy. Drain and arrange in bottom of buttered casserole. Place chicken on top. Mix together soup, mayonnaise, curry and lemon juice and pour over chicken. Sprinkle (haha, more like coat) with cheddar cheese and bake, uncovered, at 350F (180C) for 30-35 minutes. Serves 6
